In its August issue, National Restaurant News names MMB client Cooper’s Hawk Winery & Restaurant among its Next 20, a list of established restaurant brands developing at a pace that makes them best-positioned to move to the NRN Top 200. From those 20, the editors at National Restaurant News chose five brands that incorporate the most relevant trends in foodservice today — Cooper’s Hawk was among them.
The 20-unit concept, based in Countrywide, Illinois, combines a winery and restaurant with a Napa-style tasting room where customers can sample the brands own wines. Cooper’s Hawk makes its own wine — 50 different varieties that are sold in its restaurants. It also offers a Wine of the Month Club whose members receive a bottle of wine each month and discounts on wine purchases.
Domestic systemwide sales rose 26.3 percent, to $147.9 Million in the latest year. “Coopers Hawk has been a hot name in the restaurant business for years,” writes NRN, “but has kept a patient approach to expansion, adding locations as real estate becomes available. That has ensured strong, steady growth for years.”
